San roman Toro

1) We will start by taking a step back in time, visiting one of the oldest taverns in the city, where we will enjoy the white wine that became fashionable in the roaring twenties and has since become the symbol of the authentic Madrid tavern. Pay attention to the olives too, they are the best I 've tasted.

2) The second stop is run by an expert in shellfish with 25 years of trading experience in Mercamadrid, the second largest seafood market in the world. We will taste his specialty, a large plate of grilled mixed seafood, which we will enjoy with unfiltered Manzanilla. This famous Spanish white wine is the perfect accompaniment, sent to us monthly from the town that produces it, SanlĂșcar de Barrameda, assuring its freshness and lack of mechanical or chemical processing. Unique in Madrid.

3) The third eating stop not only enjoys a prime location and the largest investment in decor in the neighborhood, but also has the area's top chef, chosen as Madrid's best in 2008. We will taste her version of Migas, a dish invented by shepherds in order to take advantage of their stale bread. A real Spanish classic.

4) The fourth eating stop is at my favorite place in the city, an area with buildings that even appeared on the 1656 Teixeira map of Madrid!! We will taste all kinds of Spanish tapas with different wines from my private cellar, which include jewels like Torre Muga 2004, Santa Rosa 1999, Mas de en Compte 2004, among others. The presa ibérica tapa is especially significant since this pork is considered to be the best in the world. We will finish with one of the "not to be missed" classic Spanish pairings, blue cheese-cabrales with Pedro Ximenez.
