Jamon Iberico de Bellota Manzanilla is the most representative wine of the country due to a biological aging process unique to southwest Spain. We are the only ones in Madrid to serve the wine pure, that is, without any type of treatment what we call, "en rama".

Jamón Ibérico de bellota is a cured ham produced only in Spain and Portugal. It is at least 75% Black Iberian Pig, the only breed of pig that naturally seeks and eats acorns. A good ibérico ham has regular flecks of intramuscular fat. Because of the pig's diet of acorns, much of the jamón's fat is oleic acid, a monounsaturated fatty acid that has been shown to lower LDL cholesterol and raise HDL cholesterol.
